How much red chile sauce for tamales
Plan on 1.3 to 1.5 cups of red chile sauce per dozen tamales, which takes 1.3 to 2 oz of dried chiles. I opened seven red chile tamale recipes on 2026-10-15. Two print a sauce amount and a yield (5280, Martinez), three print a dried chile weight and a yield (5280, Martinez, PBS), and the others give chile counts or no yield. Counts vary a lot (3 to 11 chiles per dozen) because pods differ in size, so weigh them if you can.
| Recipe | Dried chiles as printed | Sauce as printed | Yield | Oz chile per dozen | Chiles per dozen | Cups sauce per dozen |
|---|---|---|---|---|---|---|
| 5280, red chile pork tamales | 8 oz California or New Mexico pods | 6 1/2 cups in the filling, 1/2 cup in the masa | 5 dozen | 1.6 | not given | 1.4 |
| Chef Rick Martinez, tamales | 2 1/2 oz (72 g) guajillo or New Mexico, about 10 to 15 | 2 cups in the filling, a further 1 1/4 cups sauce plus water in the masa | 16 tamales | 1.9 | 7.5 to 11.3 | 1.5 |
| Fiery Foods Central, red chile pork tamales | 24 New Mexico pods (in the linked sauce recipe) | 4 cups made; the page says you may not need all of it; none in the masa | not given (36 husks listed) | not given | not given | not given |
| PBS Food, pork tamales | 8 oz ancho (ingredient list also adds 2 oz for the masa; the method reserves 2 oz of sauce instead) | not stated; a small part goes into the masa, the rest into the filling | 4 to 6 dozen | 1.3 to 2.0 | not given | not given |
| Sunset, pork red chile filling | 12 guajillo | not stated (3 1/2 cups water in the pot) | filling for about 3 dozen | not given | 4.0 | not given |
| Food Network Kitchen, red chile pork tamales | 6 guajillo, 3 ancho, 3 pasilla | not stated (4 cups broth blended in; the pork braises in it; none in the masa) | 32 tamales | not given | 4.5 | not given |
| Herbivoracious, red chili sauce for tamales | 4 ancho, 2 morita, 1 aji amarillo | not stated (4 cups boiling water for soaking) | 20 to 30 tamales | not given | 2.8 to 4.2 | not given |
Per-dozen values are my own division of each printed amount by its printed yield. Chef Rick Martinez's 72 g is converted to 2.54 oz, and his sauce figure counts only the 2 cups that go into the filling. Where a page gives no sauce volume, the cell says so. The Food Network, Sunset and Herbivoracious pages give water or broth for blending or soaking, which is not the finished sauce.
Filling or masa
Nearly all the sauce goes into the filling. 5280 stirs 6 1/2 cups into the pork and 1/2 cup into the masa for 5 dozen, which is about 0.1 cup per dozen for the masa. Chef Rick Martinez puts 2 cups into the filling for 16 tamales and thins a further portion of sauce with water to 1 1/4 cups for the masa. PBS sets a small part aside to color the masa.
Fiery Foods Central and Food Network Kitchen leave the sauce out of the masa and use stock there. If you color the masa, add about a tenth of a cup per dozen to your total.
Fiery Foods Central serves the remaining sauce on the side and gives no tamale yield.
Sauce and dried chiles by dozens
| Dozens | Tamales | Dried chiles, oz | Red chile sauce, cups |
|---|---|---|---|
| 2 | 24 | 2.6 to 4 | 2.6 to 3 |
| 3 | 36 | 3.9 to 6 | 3.9 to 4.5 |
| 4 | 48 | 5.2 to 8 | 5.2 to 6 |
| 5 | 60 | 6.5 to 10 | 6.5 to 7.5 |
| 6 | 72 | 7.8 to 12 | 7.8 to 9 |
| 8 | 96 | 10.4 to 16 | 10.4 to 12 |
| 10 | 120 | 13 to 20 | 13 to 15 |
| 15 | 180 | 19.5 to 30 | 19.5 to 22.5 |
The low sauce figure is 5280's filling amount. The high one is Chef Rick Martinez's 2 cups of filling sauce for 16 tamales. The ounces run from PBS's 8 oz over 6 dozen (1.3) to the same 8 oz over 4 dozen (2.0). 5280 (1.6) and Chef Rick Martinez (1.9) fall inside. A dozens link opens the planner with that many tamales at 1 per guest.
Worked example: 20 guests, 4 each
Twenty guests at 4 tamales each is 80, which rounds up to 7 dozen (84 tamales). That takes 9.1 to 14 oz of dried chiles and 9.1 to 10.5 cups of sauce. The planner's pork shopping list uses the low end, 9.1 cups, which is 5280's filling amount. Make the larger batch if you want sauce for the table. The same run adds 5.3 to 8.8 lb of raw pork and 7 to 10.5 lb of fresh masa. Open the planner with these numbers and change them to yours.
What I added myself
The 1.3 to 1.5 cup range is my pick from the recipes that print a sauce volume, and the ounce range is my pick from the ones that print a weight. Neither is a tested yield, and sauce thickness changes the cups. 5280 says the sauce keeps in the fridge for up to a week and in the freezer for up to six months, so a larger batch costs little.
