How much cheese for tamales
For cheese and chile tamales (rajas con queso, or cheese and jalapeno) buy 0.3 to 0.5 lb of cheese per dozen. I opened five recipes on 2026-10-15 and divided each cheese weight by its yield. They run from 0.14 to 0.51 lb per dozen. Four of the five land at about 0.3 to 0.5, so that is the range I use. Meat fillings are on the pork page and the chicken page.
| Recipe | Cheese as printed | Chile as printed | Tamales | Cheese, lb per dozen | Chile, lb per dozen |
|---|---|---|---|---|---|
| Pinch and Swirl, jack and green chile | 6 oz grated jack | 8 oz canned diced green chiles | 32 | 0.14 | 0.19 |
| Mexican Made Meatless, cheese and jalapeno | 10.5 oz Chihuahua | 2 lb jalapenos, slivered | 24 to 28 | 0.28 to 0.33 | 0.86 to 1.00 |
| Food Network Kitchen, rajas con queso | 1 1/2 lb mozzarella or Oaxaca | 8 poblanos (no weight given) | 35 to 45 | 0.40 to 0.51 | not given |
| Salt and Wind, rajas con queso | 1 lb Oaxaca or low-moisture mozzarella | one batch of rajas (no count given) | 24 | 0.50 | not given |
| Hola Jalapeno, cheese and jalapeno | 1 lb shredded mozzarella | 1 lb jalapenos, charred and sliced | 24 | 0.50 | 0.50 |
Per-dozen values are my own division of each printed weight by its printed yield, sorted from least cheese to most. Ounces are converted at 16 per pound.
Why the recipes disagree
The lowest figure, Pinch and Swirl at 6 oz of grated jack for 32 tamales, is a light sprinkle. The recipes near 0.5 lb per dozen cut the cheese into sticks or strips (Food Network Kitchen uses 1/2-inch sticks) and lay one in each tamale. If you want a cheese pull, plan on the high end.
Chile is harder to pin down. Hola Jalapeno uses 1 lb of fresh jalapenos for 24 tamales, about 0.5 lb per dozen. Mexican Made Meatless uses 2 lb for 24 to 28, roughly twice that. Food Network Kitchen counts poblanos instead of weighing them: 8 for 35 to 45 tamales, which is 2 to 3 per dozen. Chiles shrink when you char and peel them, so buy a little over. Salt and Wind gives no count; it refers to a separate rajas recipe.
Mozzarella, Oaxaca, Chihuahua and Monterey jack all appear. Hola Jalapeno names Oaxaca and Monterey jack as alternatives to its mozzarella, and Salt and Wind accepts low-moisture mozzarella for Oaxaca.

A dozens link opens the planner with that many cheese tamales.
Worked example: 20 guests, 4 each
Twenty guests at 4 tamales each is 80, which rounds up to 7 dozen (84 tamales). That takes 2.1 to 3.5 lb of cheese. The planner adds 7 to 10.5 lb of fresh masa, 93 to 139 corn husks and 3 steamer loads in a pot that holds 36. Open the planner with these numbers and change them to yours. The fat for the masa is on how much lard for tamales.
